Baileys Chocolate Cheesecake Trifle

🔪 Instructions

1. Prepare the Cookie Base

  • In a medium bowl, combine the crushed chocolate cookies and melted butter (if using).

  • Press the mixture firmly into the bottom of a large trifle dish or 8-10 individual serving glasses.

  • Place the dish in the refrigerator to chill while you prepare the fillings.

2. Make the Baileys Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

  • Gradually beat in the powdered sugar until light and fluffy.

  • Mix in the vanilla extract and sea salt.

  • Slowly add the Baileys Irish Cream and continue beating until the mixture is smooth, creamy, and completely incorporated. Set aside.

3. Prepare the Chocolate Ganache (Optional Layer)

  • Place the chopped chocolate in a heatproof bowl.

  • Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.

  • Pour the hot cream over the chopped chocolate. Let it sit for 1 minute, then whisk until the ganache is smooth and glossy.

  • Allow the ganache to cool slightly to a thick but still pourable consistency.

4. Whip the Topping Cream

  • In a separate, chilled bowl, combine the heavy whipping cream, chilled Baileys, powdered sugar, and vanilla extract.

  • Beat on medium-high speed until stiff peaks form (the cream should hold its shape). Be careful not to over-whip.

5. Assemble the Trifle

  • Layer 1 (Cookie): The chilled cookie base is already in the dish.

  • Layer 2 (Cheesecake): Carefully spoon or pipe half of the Baileys Cheesecake Filling over the cookie base, spreading it into an even layer.

  • Layer 3 (Ganache): Gently drizzle half of the cooled Chocolate Ganache over the cheesecake layer. Skip this step if not using ganache.

  • Layer 4 (Whipped Cream): Spoon or pipe one-third of the Baileys Whipped Cream over the ganache/cheesecake layer.

  • Repeat: Add a second layer of remaining cheesecake filling, followed by the remaining ganache (if using).

  • Finish: Top the trifle with the remaining Baileys Whipped Cream. Use a star tip and piping bag for a beautiful finish, or simply swirl it with a spoon.

6. Garnish and Chill

  • Garnish the top with chocolate shavings or a sprinkle of crushed cookies.

  • Cover the trifle loosely and refrigerate for a minimum of 4 hours or, ideally, overnight. This allows the layers to set completely and the flavors to fully meld.
