Prep the Dish
- Preheat oven to 350°F (175°C).
- Butter an 11×7 inch (2-quart) baking dish and set aside.
Mix the Batter
- In a medium mixing bowl, combine steamed broccoli, garlic-herb cheese spread, eggs, melted butter, and diced onion. Stir until evenly blended.
- Add 1 cup of the shredded cheddar, the cornbread mix, and seasonings (garlic powder, dry mustard, onion powder).
- Stir until all ingredients are fully incorporated. The batter will be thick and textured.
Assemble and Bake
- Pour the batter into the prepared baking dish and smooth the top.
- Sprinkle the remaining 1 cup of cheddar evenly over the surface.
- Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out with moist crumbs (not wet batter).
Serve
- Let cool slightly before slicing and serving.
- Delicious served warm as a side to soups, chili, or grilled meats—or as a main with a dollop of sour cream!
