Instructions: How to Make Cake Mix Cookies
Step 1: Prep and Preheat
-
Preheat your oven to 350°F (175°C).
-
Line your baking sheets with parchment paper or silicone baking mats. This prevents sticking and helps the cookies bake evenly.
Step 2: Mix the Dough
-
In a large mixing bowl, combine the dry cake mix, vegetable oil, eggs, and vanilla extract (if using).
⚠️ Important Note: Do not follow the instructions on the back of the cake mix box. You are using the dry mix as the base for the cookie dough.
-
Mix until a thick, uniform dough forms. It will be much thicker than cake batter. A spatula, hand mixer, or stand mixer on low speed all work well.
-
Gently fold in your chosen Christmas mix-ins (e.g., M&M's, white chocolate chips).
Step 3: Scoop and Bake
-
Using a cookie scoop or a rounded tablespoon, scoop the dough and roll it into 1-inch balls.
Tip: If the dough feels sticky, refrigerate it for 15-20 minutes to make it easier to handle.
-
Place the cookie dough balls onto the prepared baking sheets, leaving about 2 inches of space between each.
-
(Optional) Press a few extra M&M's or sprinkles onto the top of each dough ball for a prettier, more festive finish.
-
Bake for 8 to 10 minutes, or until the edges are just set and the tops look slightly cracked but not browned. The centers should still look very soft.
Step 4: Cool and Serve
-
Let the cookies cool on the baking sheet for 2–3 minutes. This allows them to finish setting up and prevents them from breaking.
-
Transfer the cookies to a wire rack to cool completely.
-
Store in an airtight container at room temperature for up to 4 days.
