Step 1: Prep and Butterfly the Lobster Tails

  1. Thaw: If using frozen lobster tails, ensure they are fully thawed in the refrigerator overnight or under cold running water for 30 minutes.

  2. Butterfly: Using sharp kitchen shears, cut a slit lengthwise down the center of the hard top shell of each lobster tail, stopping just before the tail fin. Do not cut through the bottom shell or the meat completely.

  3. Lift the Meat: Gently open the shell and slide your finger underneath the meat to loosen it from the bottom shell.

  4. Position: Gently pull the meat up through the slit and rest it on top of the shell. Pinch the shell together underneath the meat for support. This is called the "piggyback" method.

  5. Season: Brush the exposed lobster meat with 1 tbsp of olive oil and season lightly with salt, pepper, and paprika.

Step 2: Start the Garlic Butter Sauce

  1. In a small saucepan or skillet over medium heat, melt the 4 tbsp of unsalted butter.

  2. Allow the butter to cook, stirring occasionally, until it just begins to brown and develops a nutty aroma (about 2-3 minutes). Watch carefully to avoid burning.

  3. Add the minced garlic to the browned butter and sauté for about 30-60 seconds, until fragrant. Do not let the garlic burn.

Step 3: Create the Creamy Finish

  1. Reduce the heat to low. Pour in the 1/4 cup of heavy cream and stir constantly until the sauce is smooth and slightly thickened (about 1 minute).

  2. Remove the pan from the heat and stir in the 1 tbsp of fresh lemon juice. Taste and adjust seasoning with a pinch more salt or pepper if needed.

Step 4: Cook the Lobster

  1. Preheat your oven to 400°F (200°C) or your broiler on high.

  2. Place the butterflied lobster tails on a baking sheet lined with parchment paper.

  3. Bake Method: Drizzle half of the creamy garlic butter sauce over the exposed lobster meat. Bake for 8-10 minutes, or until the meat is opaque and firm. The internal temperature should reach $140^{\circ}\text{F}$ to $145^{\circ}\text{F}$ ($60^{\circ}\text{C}$ to $63^{\circ}\text{C}$).

  4. Broil Method: For a faster cook and crispier finish, brush or drizzle the lobster with the melted garlic butter. Broil on the rack 6-8 inches from the heat source for 4-6 minutes. Watch constantly as broilers can cook very quickly!

Step 5: Serve and Garnish

  1. Carefully remove the cooked lobster tails from the oven.

  2. Drizzle the remaining creamy garlic butter sauce generously over the lobster meat.

  3. Garnish with the freshly chopped parsley.

  4. Serve immediately with extra lemon wedges on the side!
