Creamy Lobster and Scallop Chowder

🌟 Ingredients

For the Seafood Stock (Optional, but highly recommended)

  • 1 large lobster shell (from pre-cooked or raw lobster)

  • 4 cups water or low-sodium chicken/vegetable broth

  • 1 carrot, roughly chopped

  • 1 celery stalk, roughly chopped

  • 1/2 yellow onion, roughly chopped

  • 2 sprigs fresh thyme

  • 1 bay leaf

For the Chowder

  • 4 tablespoons unsalted butter

  • 1 cup diced yellow onion

  • 1 cup diced celery

  • 1 cup diced carrots

  • 2 cloves garlic, minced

  • 1/4 cup all-purpose flour

  • 2 cups Seafood Stock (or bottled clam juice/broth)

  • 1 cup low-fat milk

  • 1 cup heavy cream

  • 3 medium potatoes (such as Russet or Yukon Gold), peeled and diced into $1/2$-inch pieces

  • 1/2 pound cooked lobster meat, cut into $1$-inch chunks

  • 1/2 pound sea scallops, rinsed and patted dry

  • 1/2 cup fresh or frozen corn kernels

  • 1 teaspoon salt, plus more to taste

  • 1/2 teaspoon black pepper, plus more to taste

  • 1/4 teaspoon cayenne pepper (optional, for a hint of heat)

For Garnish

  • Fresh parsley or chives, chopped

  • A drizzle of extra heavy cream or melted butter
