Easy Beefy Tortellini Bake

Ingredients:

  • 1 pound ground beef
  • 1 package (9 oz) refrigerated cheese tortellini
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 jar (24 oz) marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional for a bit of heat)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for cooking the beef)
  • Fresh basil or parsley (optional, for garnish)

Instructions:

  1. Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until it’s browned and fully cooked, about 6-8 minutes. Drain any excess fat from the beef, then season with salt, pepper, garlic powder, oregano, and basil. Stir to combine and cook for another 1-2 minutes, allowing the spices to bloom.
  2. Prepare the tortellini: While the beef is cooking, bring a large pot of salted water to a boil. Add the refrigerated cheese tortellini and cook according to the package instructions (usually about 3–4 minutes). Once done, drain the tortellini and set it aside.
  3. Make the sauce: Once the beef is cooked and seasoned, add the marinara sauce to the skillet with the beef. Stir to combine, making sure the beef is evenly coated in the sauce. Let it simmer for 5 minutes to allow the flavors to meld together. If you like a bit of heat, sprinkle in the red pepper flakes at this stage.
  4. Combine the tortellini and beef mixture: Add the drained tortellini to the skillet with the beef and marinara sauce. Gently stir to combine, ensuring the tortellini is coated in the sauce. Cook for an additional 2-3 minutes, allowing the flavors to fully combine.
  5. Assemble the bake: Preheat your oven to 375°F (190°C). Transfer the beef and tortellini mixture into a greased 9×13-inch baking dish. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top. The cheese will melt into a delicious, gooey topping as it bakes.
  6. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
  7. Serve: Remove the bake from the oven and let it cool for a few minutes before serving. Garnish with fresh basil or parsley for a pop of color and added flavor. Serve warm and enjoy your comforting, cheesy beefy tortellini bake!
