Step 1: Prep the Bologna
To prevent the bologna slices from curling up into a 'cup' shape when fried, which can cause uneven cooking, you need to score them.5

Place each slice of bologna on a cutting board.

Use a small, sharp knife to cut 3 or 4 small, $1/2$-inch notches around the edge of each slice, or cut a small 'X' in the very center. The notch method often results in a flatter slice.6
Step 2: Fry the Bologna

Heat a medium-sized skillet (cast iron or non-stick) over medium to medium-high heat.7

Add the oil or butter and let it melt until sizzling.

Place the scored bologna slices in a single layer in the hot pan.

Fry the bologna for about 1 to 2 minutes per side, or until the edges are crispy and slightly caramelized, and the center is puffed.8

Once flipped to the final side, immediately place the slice of cheese on top of the bologna stack.

Remove the pan from the heat and allow the residual heat to melt the cheese (you can cover the pan for 30 seconds for a quick melt).9
Step 3: Toast the Bread (Optional, but Recommended)
While the bologna is frying (or using the same skillet after removing the bologna):

Lightly toast the bread in a toaster, or spread a thin layer of butter on one side of each slice and grill them lightly in the skillet until golden brown.
Step 4: Assemble the Sandwich

Spread your desired amount of mayonnaise and/or mustard on the un-toasted side of both slices of bread.

Place the cheesy, fried bologna stack on one slice of bread.

Top with the second slice of bread.

Slice the sandwich diagonally (for tradition's sake!) and serve immediately.
