Grilled Greek Chicken Souvlaki with Tzatziki & Salad

Ingredients:

  • For the grilled chicken skewers:
  • 1 lb chicken breast, cut into 1-inch cubes
  • 2 tablespoons olive oil 🫒
  • 3 cloves garlic, minced 🧄
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano or thyme 🌿
  • 2 tablespoons fresh lemon juice 🍋
  • Salt and black pepper, to taste
  • For the tzatziki sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber, finely grated
  • 2 cloves garlic, minced 🧄
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice 🍋
  • 1 tablespoon olive oil 🫒
  • Salt and pepper, to taste
  • For the salad:
  • 2 cups mixed greens (such as arugula, spinach, or romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • Olive oil and balsamic vinegar, for drizzling
  • Salt and pepper, to taste
