Ingredients

 

 

For the Caramel-Pecan Topping:

 

  • 1 (14 oz) can sweetened condensed milk (full-fat is recommended)
  • 1/3 cup butter (salted or unsalted, if using unsalted, consider adding a pinch of salt to the caramel)
  • 1/3 cup packed light brown sugar
  • 3 tablespoons milk (whole milk or cream is best)
  • 1 teaspoon vanilla extract
  • 1 1/2 to 2 cups pecans, roughly chopped and toasted

 

For the Base:

 

  • 2-3 sleeves (about 30-36) Ritz crackers (or similar round, buttery cracker)

 

Instructions

 

 

1. Prepare & Toast Pecans

 

  • Spread the chopped pecans on a dry baking sheet.
  • Toast in a 350°F (175°C) oven for about 5-8 minutes, or until they are fragrant and lightly golden. Alternatively, toast them in a skillet over medium heat, stirring constantly.
  • Set aside to cool slightly.

 

2. Prep Your Workstation

 

  • Line a large baking sheet with parchment paper or wax paper.
  • Lay the Ritz crackers out in a single layer on the prepared sheet.

 

3. Make the Caramel Base

 

  • In a medium-sized saucepan, combine the sweetened condensed milk, butter, and brown sugar.
  • Cook over medium heat, stirring constantly. It is crucial to keep stirring so the mixture doesn't scorch or stick to the bottom.
  • Bring the mixture to a gentle boil. Once boiling, continue to cook and stir for about 7–8 minutes. The mixture will thicken, become darker in color, and glossy.

    Note: Watch carefully! If you see any brown specks, immediately remove from heat and stir until they dissolve, then reduce your heat slightly.
