Ingredients

For the Meltaway Cookies:

  • 1 cup (2 sticks or 227g) unsalted butter, softened to room temperature

  • 1 cup (120g) powdered sugar, sifted

  • 1 teaspoon peppermint extract

  • 1/2 teaspoon vanilla extract

  • 1 cup (120g) all-purpose flour

  • 1 cup (120g) cornstarch (this is the secret to the meltaway texture!)

  • 1/2 teaspoon salt

For the Coating and Topping:

  • 10 oz. high-quality white chocolate or vanilla candy coating (like CandiQuik or Ghirardelli melting wafers)

  • 1-2 tablespoons shortening or coconut oil (optional, helps thin the chocolate)

  • 1/2 cup crushed candy canes (peppermints), about 6-8 full-sized canes
